RECIPE PREPARATION Check with candied fruit:

- Turn on the oven and line the cake forms with baking paper;

- Whisk the whole eggs together with the sugar; add the oil, then the milk; add flour and vanilla sugar; quench the baking powder with lemon juice and add it to the composition;

- The dough will be a little thicker than the pancakes;

- Pour half of the dough into each tray; sprinkle candied fruit, cut into cubes;

- Bake for 40 minutes; take out of the oven and let it cool;

If you choose to use juice instead of water or other liquid, prepare it at home, from fresh fruit. You can use oranges, tangerines or apples. Peel a squash, grate it and put it in a blender with a little water. Mix until smooth. Use the resulting juice with the pulp.

Put the juice or liquid in a large bowl. Add the candied fruit, then the essences and the flour mixed with the baking powder. Mix with a wooden spoon until smooth. The resulting composition should be similar to that for blackberry, according to thickness.

Pour the composition into a cake pan / bread / cake greased with oil and lined with baking sheet. Level above.

Let the cake bake on low heat. It needs a longer period of time than regular cake. Check with a toothpick if it is well baked inside.

Let it cool, then cut it into slices.

The composition can be placed in other types of trays: round, square, rectangular.

You can use half white flour and half wholemeal flour.

If you want to make two cake trays, double the quantities. Instead of candied fruit you can use a mixture of dried fruits (raisins, cranberries, blackcurrants, goji, etc.). They must be left to hydrate in juice / water before being placed in the cake composition.
